A leading food safety expert in Wales has been appointed as a Professor.
Dr Elizabeth Redmond has been appointed as Professor of Food Safety, Health and Behaviour at Cardiff Metropolitan University’s ZERO2FIVE Food Industry Centre.
Professor Redmond has been engaged in food safety research at Cardiff Metropolitan University for the past 26 years and is currently the Research Group Lead at ZERO2FIVE’s Food and Drink Research Unit. Elizabeth’s key academic interests include exploring social, cognitive and behavioural factors associated with food safety in consumer, healthcare and food industry sectors. She has a particular interest in consumer food safety with a focus on specific pathogens, infant feeding and ‘at-risk’ audiences (for example, chemotherapy patients/carers and older adults).
Elizabeth’s other areas of focus include food safety culture in food manufacturing and food service, food safety education of healthcare professionals such as dieticians, and theory-based data-driven intervention development for targeted groups. Overall, much of her research aims to increase implementation of risk-reducing food safety behaviours and ultimately contribute to a decrease in incidence of foodborne disease. Elizabeth’s research has led to publication/authorship of over 55 research publications and more than 190 national and international conference contributions.
Over the past 26 years, Professor Redmond has also contributed to and been the Principal Investigator for over 25 multi-disciplinary research projects for high profile organisations such as the UK Food Standards Agency and the Welsh Government. Elizabeth has been an invited scholar for national and international funding collaborations, editorial roles and PhD examining. She has also worked with international collaborators from across the globe including France, Lebanon, Brazil, USA and New Zealand and is also a trustee for a leading international scientific authority.
In addition to undertaking ZERO2FIVE research, Professor Redmond is a Director of Studies and Supervisor for Post-Doctorate, PhD, Professional Doctorate, Masters and Undergraduate research food safety studies. In recognition of her commitment to her supervisory role, Elizabeth won the ‘Exceptional Supervisory Team of the Year’ award at the inaugural Cardiff Met Doctoral Researcher Supervisor Awards this year alongside her colleague Dr Ellen Evans.
Speaking about her appointment, Professor Redmond said, “It’s a great honour to have been awarded the title of Professor of Food Safety, Health and Behaviour. I am looking forward to continuing and further progressing high-quality, impactful and novel food safety research in Cardiff Met at ZERO2FIVE Food Industry Centre. I intend to expand our research team with new Post-Doctoral, Doctoral and collaborative research studies and continue to build UK-based and international partnerships to benefit the consumer, healthcare and food industry sectors and ultimately impact and improve food safety across the globe.”
