Our professionally accredited BSc (Hons) Food Science and Nutrition degree at Cardiff Met is an exciting development that responds to the needs of the industry to provide trained graduates for the global food industry sector. You will learn about the development of new foods, and how foods can impact health, wellness, and disease prevention, as well as the concepts and development of food to the quality, safety, and innovation within the sector. You can choose between two pathways: Food Science and Nutrition (Human Nutrition) or Food Science and Nutrition (Quality, Safety & Innovation).

Our professionally accredited Human Nutrition & Dietetics degree is fully funded by the NHS Bursary Scheme. You will complete three clinical placements as part of your learning where you’ll get to apply your academic knowledge, meaning you’ll graduate as a registered dietitian.

You also have the opportunity to continue your studies by undertaking one of our postgraduate Food Science, Nutrition or Dietetics programmes.

Food Industry Centre

ZERO2FIVE Food Industry Centre has an international reputation for food safety research and provides expertise, training and advice to the food and drink industry.

Students undertaking Food Science and Nutrition degrees at Cardiff Met University benefit from the close association with staff at ZERO2FIVE and the use of its state-of-the-art facilities, which include pilot food processing facilities, test and development kitchens and a sensory evaluation suite. “After I finished the 2nd year of my degree, I chose to complete a 12-month industrial placement at Brecon Foods. My role within the company was a Student Food Technologist, based in the new product development (NPD) department. Whilst I was there, I spent my time in the NPD kitchen creating new recipes and re-working old ones. I got the opportunity to work with different baby food brands – who knew it could taste so good! It was great to be able to put all the skills I learnt in Uni into practice in the working environment, I am also able to relate what I learnt on the placement to assignments and lectures which has really boosted my confidence!”

“The course at Cardiff Met has a long successful history training dietitians and it also offers a recognised protected title upon graduating which allows you to legally practice as a professional dietitian. Additionally, it can be funded by NHS Learning Support Fund for those who live in Wales. During my experience in the ‘Quest for Health’ showcase, I witnessed first-hand just how effective the skills we had been covering in our lectures are when used in a real-world situation and how excited and engaged children become when they are involved in their learning using simple but effective communication skills.”

Meet the Team

Ali Birrane – Lecturer in Nutrition and Dietetics

I graduated from UWIC back in 2005 after completing the PG Diploma in Dietetics where I went on to register as a Dietitian and work in several different settings throughout my 15 years working in the NHS in the Cardiff and Vale UHB. My role as a Dietitian covered clinical specialities in acute settings, working in the community educating service users to help manage their chronic health conditions and latterly leading on public health initiatives and projects facilitating Agored Cymru Nutrition courses. This grew my interest in educating others and led me to lecturing at Cardiff Met, where I once graduated. Now teaching on the BSc Human Nutrition and Dietetics course, PG Diploma in Dietetics and Masters level Advanced Practice Educators Course, as well as the Foundation course that progresses to the Nutrition and Dietetics courses. My passion as a lecturer is fostering student’s communication skills, as well as teaching in specialist areas in renal, public health, cultural diversity and diet, lifecycle nutrition for school age children, adolescents and young people. At present completing a Postgraduate Certificate in Academic Practice and taking the position of admissions tutor for the BSc Human Nutrition and Dietetics course.

James Blaxland – Senior Lecturer in Microbiology

My academic journey began by being inspired in a darkened microbiology lab in my college days in Cornwall, where I was excited to see some of the parasites that have been recovered from patients!! I came to Cardiff Met in 2006 and completed my BSc and MSc in Biomedical Science (Medical Microbiology) before undertaking my PhD in Pharmaceutical microbiology at the School of Pharmacy, Cardiff University. My PhD focused on identifying novel components from hops and testing their ability to destroy drug resistant pathogens! Something my current project students still do. Following my PhD I worked on projects with the UK Health Security Agency, Porton Down; Before moving into a public engagement role bringing microbiology teaching into primary schools in South Wales. Seeing the fascination in these young people when they learnt about bacteria and viruses really focused my career and I am proud to say it led me back to Cardiff Met.
