My role at the ZERO2FIVE Food Industry Centre
I contribute to research within the ZERO2FIVE Food and Drink Research Unit at Cardiff Metropolitan University and I am also undertaking a PhD which focuses on the determination of food safety culture in catering establishments. My study evaluates factors that influence food safety compliance and culture within micro, small and medium-sized catering businesses to aid the development of a sector specific tool for the determination of food safety culture. This will inform the development of bespoke, targeted interventions to improve food safety compliance and culture to reduce the incidence of food borne illness.
I am particularly interested in the potential of the food hygiene rating as a determinate of food safety culture.
My project is overseen by Professor Arthur Tatham (Director of Studies) and Professor Elizabeth C Redmond (Supervisor).
Alongside consulting and training in the food industry, I teach on the Food Science and Technology programme at undergraduate and postgraduate level, namely Food Microbiology and Global Food Quality Management Systems.
