Mae Simon yn dysgu ac yn ymchwilio ym meysydd Deallusrwydd Artiffisial, Dysgu Peirianyddol, Rhwydweithiau Niwral, Cyfrifiadureg Defnyddiwr Terfynol, Gwallau Taenlen a Ffactorau Dynol. Mae Simon yn aelod hirsefydlog o staff sy wedi bod yn dysgu yn y brifysgol am 18 mlynedd ac ef yw cynrychiolydd undeb llafur UCU ar gyfer Ysgol Dechnolegau Caerdydd.
